These cookies are reminiscent of no-bake, breakfast cookies and are perfect for a morning meal! They are not overly sweet and the coconut gives them a subtle flavor. Our cinnamon roll protein powder is the perfect fall flavor. Each cookie has 5g of protein and is amazing topped with your favorite nut butter for a tasty snack.
Ingredients
- 1 scoop (32g) Core Nutritionals PRO Cinnamon Roll
- 1 ¼ cups (100g) quick oats
- 2 T. (14g) coconut flour
- 2 T. (13g) ground flax seed
- ¼ cup (15g) unsweetened flaked coconut
- 1 tsp. pumpkin pie spice 1 T. no-calorie sweetener
- 1 cup (240g) pumpkin puree
- 1 whole egg
Directions
Preheat oven to 350 degrees. In a medium size mixing bowl, combine all dry ingredients then add pumpkin puree and egg. Mix until it forms dough. Cover and refrigerate for 1 hour. Roll into 12 evenly sized cookies and press down. Bake for 12 minutes. Store remaining cookies in refrigerator.
